Ingredients

  • 1 cup Pastina (small pasta)

  • 1 large egg

  • 1 tablespoon unsalted butter

  • ½ cup grated Parmesan cheese

  • Salt and pepper (to taste)

  • Fresh parsley (optional, for garnish)

Instructions

  • Boil the Pastina
    Bring 4 cups of water to a boil, adding a pinch of salt. Stir in the pastina and cook according to package instructions (about 3-5 minutes) until tender but not overcooked. Stir occasionally to prevent clumping.

  • Prepare the Egg
    While the pastina cooks, crack the egg into a bowl and lightly beat with a fork until the yolk and whites are combined.

  • Combine Egg and Pastina
    Once the pastina is cooked, drain excess water, leaving a little behind to help create a creamy texture. Return the pot to low heat and add the butter. Stir until it melts and coats the pasta.

  • Add the Egg
    Slowly pour in the beaten egg, stirring continuously to prevent scrambling. The heat from the pasta will cook the egg gently, creating a smooth sauce.

  • Add Cheese and Season
    Stir in the grated Parmesan cheese and season with salt and pepper. Continue stirring until everything is well combined and creamy.
