Ingredients
-
5 whole vanilla beans
-
1/2 cup light corn syrup (or food-grade glycerin)
-
1/4 cup water
-
1 tbsp vodka (optional, for preservation)
-
1 tsp sugar (optional, for added sweetness)
Instructions
-
Slice the Beans: Split the vanilla beans lengthwise and scrape out the seeds with a knife. Set both seeds and pods aside.
-
Simmer the Base: In a small saucepan, combine corn syrup (or glycerin), water, and sugar. Simmer on low heat until slightly thickened (3–5 minutes).
-
Add Vanilla: Stir in the vanilla seeds and pods. Simmer for another 5 minutes, then remove from heat.
-
Cool & Blend: Let the mixture cool. Remove the pods, then blend the mixture to a smooth paste if desired.
-
Bottle: Pour into a clean glass jar. Add vodka if using, and shake well. Store in the fridge or a cool, dark place.
Notes
-
Use 1 tbsp of this paste in place of 1 vanilla bean or 1 tbsp of store-bought paste.
-
Keeps up to 6 months refrigerated.
-
Try with Madagascar, Tahitian, or Mexican vanilla beans for different flavor profiles.
