Description

Ingredients

  • 1.5 lbs sirloin or ribeye steak, cut into 1-inch cubes
  • 3 tablespoons unsalted butter, divided
  • 4 garlic cloves, minced
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika (optional)
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 2 tablespoons butter
  • 2 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon all-purpose flour
  • Fresh chopped parsley (for garnish)
  • Extra Parmesan shavings (for garnish)
  • Lemon wedges (for garnish)

Instructions

  1. Pat the steak cubes dry and season with salt, pepper, and smoked paprika.
  2. Preheat a cast-iron skillet over medium-high heat. Add olive oil and 1 tablespoon butter.
  3. Sear steak bites in a single layer for 2 minutes, then flip and cook another 1–2 minutes. Remove from pan and set aside.
  4. Reduce heat to medium, add remaining 2 tablespoons butter and minced garlic. Sauté for 30 seconds.
  5. Whisk in flour and cook for 1 minute. Slowly add heavy cream while whisking to avoid lumps.
  6. Bring to a simmer, then add Parmesan, red pepper flakes, and thyme. Whisk until smooth.
  7. Return steak bites and juices to pan. Toss gently to coat and cook for 1–2 minutes to reheat.

Notes

Use room-temperature steak for even cooking and avoid overcrowding the pan to get that perfect sear.
