  • 1 clove Garlic (minced)

  • Zest from 1 lemon


Instructions

  1. Boil the Broth: Bring the chicken (or vegetable) broth to a boil in a medium-sized pot over medium heat. You can add a pinch of salt for seasoning.

  2. Cook the Pastina: Add the Pastina to the boiling broth. Stir occasionally and cook for about 5-7 minutes, or until the pasta is tender and most of the liquid is absorbed.

  3. Add Butter and Parmesan: Lower the heat. Stir in butter and grated Parmesan until they melt and create a creamy consistency.

  4. Add the Egg: In a small bowl, beat the egg. Slowly pour it into the hot pasta while stirring gently, allowing the heat to cook the egg and create a silky texture in the dish.

  5. Season and Serve: Taste the Pastina and season with salt and pepper as needed. Add optional fresh herbs, garlic, or lemon zest for extra flavor.
