Description

This crowd-pleasing casserole fuses classic comfort with bold Mexican flavors. A cheesy, creamy chicken filling layered with crunchy Doritos makes it a summer favorite that’s as easy as it is irresistible.

  • 1 large bag (14.5 oz) Nacho Cheese Doritos, lightly crushed
  • 2 cups cooked chicken, shredded (rotisserie works perfectly)
  • 3 cups sharp cheddar cheese, shredded and divided
  • 1 can (10.75 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 can (10 oz) RoTel diced tomatoes with chilies, undrained
  • ½ packet taco seasoning
  • ¼ cup whole milk
  • Fresh cilantro, chopped (optional garnish)
  • Green onions, sliced (optional garnish)
  • Additional sour cream for serving (optional garnish)
  • Sliced jalapeños (optional garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9×13-inch casserole dish with non-stick cooking spray.
  2. In a skillet over medium heat, combine cream of chicken soup, sour cream, RoTel (with juices), taco seasoning, and milk. Whisk until smooth and simmer for 2–3 minutes.
  3. Spread half of the crushed Doritos in the bottom of the prepared dish.
  4. Top with shredded chicken evenly distributed over the Doritos.
  5. Pour half the creamy sauce over the chicken and spread evenly.
  6. Sprinkle 1 cup of shredded cheese on top.
  7. Add remaining Doritos as another layer.
  8. Pour remaining sauce over the top.
  9. Top with remaining 2 cups of shredded cheese.
  10. Bake uncovered for 25–30 minutes until bubbly and golden.
  11. Let rest for 5 minutes before serving.
  12. Garnish with cilantro, green onions, and sour cream if desired.

Notes

Lightly crush Doritos for a crunchy texture. For a vegetarian option, swap chicken with black beans or plant-based protein. Leftovers taste even better the next day!
