Creamy garlic sauce baby potatoes are a comforting, savory delight that combines tender baby potatoes with a rich, garlicky cream sauce—perfect as a side dish or vegetarian main.

- 1.5 pounds baby potatoes (7–8 small potatoes)
- 1 cup heavy cream (or half-and-half/coconut cream)
- 4–5 cloves garlic, minced
- 3 tablespoons butter
- 1 tablespoon olive oil
- 1/2 cup grated Parmesan cheese (optional)
- 1 teaspoon fresh thyme (or rosemary)
- Salt and pepper, to taste
- 1 tablespoon fresh parsley, finely chopped
Instructions
- Wash baby potatoes thoroughly. Leave skins on. Halve if large, or keep whole if small.
- Place potatoes in a large pot, cover with water, add a pinch of salt, and boil. Simmer 10–15 minutes until fork-tender.
- In a skillet, heat olive oil on medium. Add minced garlic and sauté for 1–2 minutes until golden.
- Add butter to skillet and melt. Pour in heavy cream, bring to a simmer, and cook for 5 minutes to slightly thicken.
- Optional: Stir in grated Parmesan until melted and fully incorporated.
- Drain potatoes and add to skillet. Gently toss to coat in sauce. Cook 3–5 more minutes to absorb flavor.
- Garnish with chopped parsley and extra Parmesan if desired. Serve hot.
Notes
For dairy-free, use coconut cream or almond milk. For deeper flavor, try roasted garlic. Yukon Gold or Red potatoes can replace baby potatoes.
