Ingredients

  • 1.5 pounds baby potatoes (78 small potatoes)
  • 1 cup heavy cream (or half-and-half/coconut cream)
  • 45 cloves garlic, minced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 cup grated Parmesan cheese (optional)
  • 1 teaspoon fresh thyme (or rosemary)
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Wash baby potatoes thoroughly. Leave skins on. Halve if large, or keep whole if small.
  2. Place potatoes in a large pot, cover with water, add a pinch of salt, and boil. Simmer 10–15 minutes until fork-tender.
  3. In a skillet, heat olive oil on medium. Add minced garlic and sauté for 1–2 minutes until golden.
  4. Add butter to skillet and melt. Pour in heavy cream, bring to a simmer, and cook for 5 minutes to slightly thicken.
  5. Optional: Stir in grated Parmesan until melted and fully incorporated.
  6. Drain potatoes and add to skillet. Gently toss to coat in sauce. Cook 3–5 more minutes to absorb flavor.
  7. Garnish with chopped parsley and extra Parmesan if desired. Serve hot.

Notes

For dairy-free, use coconut cream or almond milk. For deeper flavor, try roasted garlic. Yukon Gold or Red potatoes can replace baby potatoes.
