Description

Ingredients

  • 1 lb lean ground beef (or ground turkey)
  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup milk (dairy or non-dairy)
  • Salt and pepper to taste
  • Chopped green onions, for garnish
  • Bacon bits (optional)
  • Parsley or chives, for garnish

Instructions

  1. In a large pot, heat 1 tablespoon of butter over medium-high heat. Add ground beef and cook until browned, about 5–7 minutes. Drain excess fat and set beef aside.
  2. In the same pot, melt remaining tablespoon of butter. Add diced onion and sauté for 3–4 minutes until soft. Add minced garlic and cook for another minute.
  3. Add diced potatoes and beef broth. Bring to a boil, then reduce to a simmer and cook for 20 minutes until potatoes are tender.
  4. In a separate saucepan, melt 2 tablespoons butter. Whisk in flour and cook for 1–2 minutes. Slowly add milk, whisking constantly, and cook for 2 more minutes until slightly thickened. Stir in heavy cream.
  5. Return cooked beef to the pot. Add creamy mixture and stir well. Gradually add shredded cheddar, stirring until fully melted. Season with salt and pepper.
  6. Ladle soup into bowls. Garnish with green onions, bacon bits, and parsley or chives. Serve hot.

Notes

To lighten the soup, use ground turkey, low-fat milk, and reduced-fat cheese. For a low-carb option, substitute cauliflower for potatoes.
